    Prepare Your Ingredients

    • Soak red chills in hot water for 10 mins.
    • Fine chop garlic , onion , scallions and corrriander leaves .
    • Fire roast tomatoes- once cool remove skin.
    • Rinse canned beans with water.

    Blend Sauce Mix

    • Blend tomatoes, water, soaked red chill and chillpowder into a smooth paste.

    Prepare Enchilada Sauce

    • In a pan heat some vegetable/olive oil and add maida.
    • Cook for 1-2 mins and stir continously to avoid lumps.
    • Add chopped garlic and cook for another minute.
    • Add sauce mix to pan and stir thoroughly.
    • Add some water and salt to taste.
    • Add spice mix,tomato ketchup and mix thoroughly.
    • Cook covered for 5-7 mins.

    Prepare Filling

    • In a mixing bowl, add beans, sweet corn , chopped onion , scallions and corriander leaves.
    • Add enchilada sauce , sprinkle salt and pepper to taste and mix well.

    Roll up Tortillas

    • Add 2-3 tsp filling mixture to tortilla.
    • Add shredded mozeralla and cheddar cheese on top.
    • Roll it up!

    Bake tortillas

    • Add enchilada sauce on bottom of baking. trey
    • Place tortilla rolls and spread enchilada saice on top.
    • Spread filling material on top.
    • Spread another layer of enchilada sauce.
    • Sprinkle some green onions and cheese on top.
    • Bake at 180c for 20-25 mins.

    Serve Hot!

    • Garnish with some more green onions and serve hot.
