  • Vegetable/Olive Oil (1 tbsp)
  • Salt (to taste)

    Prepare Your Ingredients

    • Chop onion, carrot, celery into small pieces of 1.5 to 3 mm.
    • Fine chop garlic & basil (for garnish).
    • Fire roast tomatoes – peel the skin off and dice roughly.

    Prepare Veg Broth

    • Set a saucepan on medium to high flame and put 200 ml of water per serving along with stock cube powder. Simmer for about 5-10 mins. Give it a stir every now and then till the broth comes ta a good boil. Set aside.

    Boil Pasta

    • Boil water in a pot.
    • Add shell pasta and boil for 8-10 mins until the pasta is near to ready.

    Saute Veggies

    • Heat oil in a saucepan and add onion, carrot & parsley.
    • Saute for 1-2 min.
    • Sprinkle some salt to taste and saute for another minute.
    • Add chopped garlic and spice mix.
    • Cook for another minute.
    • Add dices tomatoes and cook until tomatoes are tender and soft (7-8 mins).

    Blend the mixture

    • Cool cooked veggies for 5-6 mins.
    • Blend the mixture into a smooth paste and set aside.

    Bring it Together

    • Heat the same saucepan and add blended mix along with vegetable stock.
    • Add black pepper, salt to taste and Balsamic Vinegar.
    • Mix well, bring to boil and simmer for 10 mins.

    Serve Hot

    • Add boiled pasta in the saucepan and cook for 3 minutes.
    • Add cream and mix well.
    • Add parmesan cheese, mix well, garnish with chopped basil and serve hot!
