In Your Bag

You Will Need

- Vegetable/Olive Oil (1 tbsp)
- Salt (to taste)
- Pepper Powder
- Mixing bowls
Prepare Your Ingredients
- Chop onion, carrot, celery into small pieces of 1.5 to 3 mm.
- Fine chop garlic & basil (for garnish).
- Fire roast tomatoes – peel the skin off and dice roughly.
Prepare Veg Broth
- Set a saucepan on medium to high flame and put 200 ml of water per serving along with stock cube powder. Simmer for about 5-10 mins. Give it a stir every now and then till the broth comes ta a good boil. Set aside.
- Boil water in a pot.
- Add shell pasta and boil for 8-10 mins until the pasta is near to ready.
- Heat oil in a saucepan and add onion, carrot & parsley.
- Saute for 1-2 min.
- Sprinkle some salt to taste and saute for another minute.
- Add chopped garlic and spice mix.
- Cook for another minute.
- Add dices tomatoes and cook until tomatoes are tender and soft (7-8 mins).
Blend the mixture
- Cool cooked veggies for 5-6 mins.
- Blend the mixture into a smooth paste and set aside.
Bring it Together
- Heat the same saucepan and add blended mix along with vegetable stock.
- Add black pepper, salt to taste and Balsamic Vinegar.
- Mix well, bring to boil and simmer for 10 mins.
- Add boiled pasta in the saucepan and cook for 3 minutes.
- Add cream and mix well.
- Add parmesan cheese, mix well, garnish with chopped basil and serve hot!
