Instructions

Prepare Your Ingredients
- Wash and dab dry eggplant and tomatoes.
- Chop Garlic and Mint.
- Dice onion, eggplant and tomato.

Mix the veggies
- In a mixing bowl add diced egg plant, onion, tomato and garlic. Drizzle generous amount of Olive oil and sprinkle salt and pepper powder (to taste).

Bake the Veggies
- Place the veggies on a baking trey and bake in a pre-heated oven for 20-25 minutes or until the veggies are tender. Make sure to turn the veggies over a couple of times to ensure even browning.
- Remove from oven and set aside. Let cool until the veggies are just warm.

Toast Bread
- Brush a non-stick pan with Olive oil.
- Toast bread on both sides until brown and crisp.

Bring It Together
- Move veggies to a mixing bowl and sprinkle with Feta and Mint.

Serve Hot
- Serve immediately on top of toasted, rustic, bread slices. Garnish with mint if desired.
