Instructions

    Prepare Your Ingredients

    • Wash and dab dry eggplant and tomatoes.
    • Chop Garlic and Mint.
    • Dice onion, eggplant and tomato.

    Mix the veggies

    • In a mixing bowl add diced egg plant, onion, tomato and garlic. Drizzle generous amount of Olive oil and sprinkle salt and pepper powder (to taste).

    Bake the Veggies

    • Place the veggies on a baking trey and bake in a pre-heated oven for 20-25 minutes or until the veggies are tender. Make sure to turn the veggies over a couple of times to ensure even browning.
    • Remove from oven and set aside. Let cool until the veggies are just warm.

    Toast Bread

    • Brush a non-stick pan with Olive oil.
    • Toast bread on both sides until brown and crisp.

    Bring It Together

    • Move veggies to a mixing bowl and sprinkle with Feta and Mint.
  • 6

    Serve Hot

    • Serve immediately on top of toasted, rustic, bread slices. Garnish with mint if desired.
